GINGER HONEY CHICKEN TENDERS...
Since Diana moved out, and not just 10 minutes away but all the way across the Atlantic, (we do nothing small), she has been experimenting in the kitchen and making me real proud- becoming quite the kitchen princess. She created some really nice dishes, preparing my recipes and trying completely new ones she has found or came up with herself. (Can I take a little credit here and gloat a bit...?) Anyhow, this particular recipe she made for my mother's birthday, of course sent me all her pictures too, as always. And no, not just pictures of her outfits she is making me help her choose on a daily basis but numerous ones of her kitchen adventures. So, I decided to try this recipe one night. Oh my, what a lovely taste, super simple and easy to make. Hope you will give it a try as well!
Ingredients for 4 people:
- 2 lbs of boneless skinless chicken breast tenders
- 1/3 of a cup honey
- 1/4 of a cup soy sauce (you can use reduced sodium if you prefer)
- 1 teaspoon of ground ginger
- 1 teaspoon of minced garlic
- 2 tablespoons of dried minced onion
- 1/4 of a cup sliced green onions
Grease a 9 x 13 glass baking pan with butter. Arrange chicken tenders in a single layer onto bottom of baking dish. In a bowl, mix together honey, soy sauce, ginger, garlic, and dried onions. Pour mixture over chicken. Cover pan with plastic foil and let it marinate in refrigerator for at least an hour. I prepared mine in the morning and let it marinate all day, turning it around once.
When you are ready to bake, preheat oven to 425 degrees. Remove chicken from fridge, discard plastic foil, and bake chicken for about 20-30 minutes. Remove dish from oven, turn chicken pieces over, then top it with the sliced green onions. Return baking dish to oven and bake it for another 10-20 minutes (or until chicken is no longer pink and juices run clear).
I served it with white jasmine rice and garlic roasted Brussels sprouts. (Halve the brussels sprouts, place in baking dish, sprinkle with oilve oil, add 2-3 cloves of minced garlic, season with salt and pepper, roast it in oven on 400 to 425 degrees). Delicious! Enjoy! #mommyknowsbest
